What can I use instead of white wine for shrimp scampi?

Vinegar - any kind will be too acidic - lemon is better - there is a chicken broth out there that has lemon added. fruit juices are too sweet and canned clams are too watery to add any flavor. Any alchohol in wine cooks out in the process - a mix of wine and broth should work too. Scampi is better when good olive oil is used - fresh garlic - fresh herbs and real er. wine or broth is a secondary flavor - mainly to loosen or thin the sauce - the star of course is the shrimp - use large to jumbo - cook separately - barely pink and add to sauce before serving - dont' forget the bread - enjoy.
